Devour

Denver and most of Colorado's other well known cities have arrived when it comes to having great food. This hasn't always been the case. There is actually a food "scene" in Colorado. The chefs here seem to be willing to experiment and try something new. Whether it's using: corn scum (huiclachote), squash blossoms, or fusing types of cuisines, it is now fairly easy to find most types of foods here-and it is actually cooked well! It drives me freakin nuts when local chefs are interviewed and asked what their favorite food city is. They always answer New York City. It is so obvious that the question should be " What is your favorite American food city-other than NYC?" If these chefs aren't acknowledging their own work in Denver (Boulder/Aspen/Vail/Breck/Fort Collins) and that of their colleagues in this state, then they aren't eating the fantastic food being produced in Colorado and they need to get out of their kitchen and start eating the competition's food. Just saying.
